History of Gino’s East
Sam Levine, Fred Bartoli, and George Loverde were the main masterminds behind the restaurant and it was launched a long time back in 1966. The company purchased a building at East Superior Street but was not ensured about what they wanted to do with the company.
While speaking to a reporter from the Tribune in 1983, the founders of the restaurant revealed that it was purchased by new owners. According to the owners, they were advised by someone that they should include pizza but they didn’t know anything about pizza at the time.
The original spot used to offer deep-dish pizza between 1996 and 2000. However, the building had to be demolished due to structural problems in 2000 and it was eventually shifted to the 600 block of North Wells.
A new building was established at 162 E Superior St. in 2003 and they soon went back to the main location in a new spot in 2006. The Gino’s deep dish was not created by the main owners despite that they were Italian and they also hired Alice Mae Redmond as a cook for Pizzeria Uno.
Alice also developed a unique dough recipe while she worked at Pizzeria Uno for around 17 years. She also stated that she was not satisfied with the crust created at Uno’s.
Alice was working for around 29 years as a pizza cook and recipe developer at Gino’s East and she retired in 1989. The restaurant was also joined by Alice’s nephew Glenn Hudley as the restaurant’s manager.
